The Shiraz grape is well suited to the soils and climate of the Dealu Mare. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.
This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine.
