Produced in Santorini under the PDO Santorini classification, this Vinsanto is made from sun-dried grapes of Assyrtiko (85%) and Aidani (15%), which concentrate sugars and flavours before fermentation. After sun-drying, the wine undergoes slow fermentation and is matured for six years in oak barrels, allowing it to develop depth, richness, and complexity while retaining vibrant acidity.
